As the weather gets warmer, I find myself coming out of the winter gloom that plagued me on and off for a couple of months.
I am, indeed, a tropical girl.
This extra spring in my step means I am back to creating new things, especially in the kitchen. My friend got a new bike for her birthday and she’s been riding it around. She came over to see me and filled her bike basket with lemons from her lemon tree.
So what do you do when you have so many lemons? Find lemon recipes!
I tried a lot of firsts this time around. The Lemon Curd recipe was very quick and easy to make. Put in the fridge for four hours and you have a delicious dessert for the whole family.
Then comes the Lemon Slice. I shaped mine into a heart because I wanted to try out my new heart baking tray. The problem was that my oven wasn’t as powerful and I keep forgetting to put an extra 20 minutes to all recipes I cook in the oven. Although the slice didn’t end up as pretty, it was still quite a hit.
Finally, I made Cheese Naans. The recipe didn’t have garlic but I love garlic and cheese naans, so I added garlic powder before mixing the dough. I think next time I will use fresh garlic (I couldn’t this time because I ran out). And maybe let it rise longer. We had it for dinner, dipped into the sauce of the curried scallops I cooked.
It was a good weekend of first tries.
